Ingredients
- 6 fresh peaches, peeled and diced
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 12 egg roll wrappers
- 1/4 cup melted butter
- Vanilla ice cream (optional, for serving)
Instructions
- In a large bowl, combine 6 diced peaches, 1/2 cup sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon cornstarch.
- Lay an egg roll wrapper on a clean, dry surface with a corner pointed toward you. Place 2-3 tablespoons of the peach mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold the sides in, and roll tightly. Use a small amount of water to seal the top corner of the wrapper.
- Repeat with the remaining wrappers and peach mixture.
- Preheat the air fryer to 375°F (190°C). Brush the egg rolls with melted butter and place them in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, or until golden brown and crispy, turning halfway through cooking.
- Serve the peach cobbler egg rolls warm, with a scoop of vanilla ice cream if desired. Enjoy!
