Instructions

  • In a large bowl, combine 6 diced peaches, 1/2 cup sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon cornstarch.
  • Lay an egg roll wrapper on a clean, dry surface with a corner pointed toward you. Place 2-3 tablespoons of the peach mixture in the center of the wrapper.
  • Fold the bottom corner over the filling, then fold the sides in, and roll tightly. Use a small amount of water to seal the top corner of the wrapper.
  • Repeat with the remaining wrappers and peach mixture.
  • Preheat the air fryer to 375°F (190°C). Brush the egg rolls with melted butter and place them in the air fryer basket in a single layer.
  • Air fry for 10-12 minutes, or until golden brown and crispy, turning halfway through cooking.
  • Serve the peach cobbler egg rolls warm, with a scoop of vanilla ice cream if desired. Enjoy!
