Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- Zest of 2 oranges
- 1/4 cup fresh orange juice
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together 1 3/4 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
- In a large bowl, cream 1 cup of softened butter with 1 cup of granulated sugar until light and fluffy.
- Beat in 4 large eggs, one at a time, then stir in the zest of 2 oranges, 1/4 cup of fresh orange juice, and 1 teaspoon of vanilla extract.
- Gradually blend in the dry ingredients until just incorporated. Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together 1/2 cup of powdered sugar with enough orange juice to make a thick but pourable glaze. Drizzle the glaze over the cooled cake.
