Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together 1 3/4 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
  • In a large bowl, cream 1 cup of softened butter with 1 cup of granulated sugar until light and fluffy.
  • Beat in 4 large eggs, one at a time, then stir in the zest of 2 oranges, 1/4 cup of fresh orange juice, and 1 teaspoon of vanilla extract.
  • Gradually blend in the dry ingredients until just incorporated. Pour the batter into the prepared loaf pan.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
