Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon pure peppermint extract
- 1/2 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- Green food coloring (optional)
Instructions
- In a mixing bowl, whisk together 2 cups of heavy cream, 1 cup of whole milk, and 3/4 cup of granulated sugar until the sugar is dissolved.
- Stir in 1 teaspoon of pure peppermint extract and 1/2 teaspoon of vanilla extract.
- If desired, add a few drops of green food coloring to achieve the desired mint color.
- Cover the bowl and refrigerate the mixture for at least 2 hours, or overnight, to chill thoroughly.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
- During the last few minutes of churning, add 1/2 cup of mini chocolate chips to the ice cream maker.
- Transfer the churned ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm.
- Scoop and serve the mint chocolate chip ice cream with a hint of peppermint extract, and enjoy!
