Instructions

  • In a blender, combine 1 ripe mango, 1 1/2 cups of coconut milk, 2 tablespoons of honey or maple syrup, and 1 teaspoon of vanilla extract. Blend until smooth.
  • Pour the mango mixture into a bowl and stir in 1/4 cup of chia seeds. Mix well to combine.
  • Cover the bowl and refrigerate for at least 4 hours or overnight, stirring occasionally to prevent clumping.
  • Once the pudding has thickened to your desired consistency, divide it into serving cups and top with sliced mango, shredded coconut, and chopped nuts if desired.
