Lucky Charms Cheesecake

Ingredients
- 2 cups of Lucky Charms cereal
- 1 1/2 cups of graham cracker crumbs
- 1/2 cup of unsalted butter, melted
- 24 oz of cream cheese, softened
- 1 cup of granulated sugar
- 1 tsp of vanilla extract
- 4 large eggs
- 1/2 cup of sour cream
- 1/4 cup of all-purpose flour
- 1/2 cup of Lucky Charms marshmallows (for topping)
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a food processor, pulse 2 cups of Lucky Charms cereal until finely ground. In a medium bowl, combine the ground cereal with 1 1/2 cups of graham cracker crumbs and 1/2 cup of melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat 24 oz of softened cream cheese, 1 cup of granulated sugar, and 1 tsp of vanilla extract until smooth. Add 4 large eggs, one at a time, mixing well after each addition. Stir in 1/2 cup of sour cream and 1/4 cup of all-purpose flour until combined.
- Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Remove from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle 1/2 cup of Lucky Charms marshmallows over the top of the cheesecake. Slice and enjoy!
