Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1/2 cup of granulated sugar until light and fluffy.
- Add the zest of 1 lemon and 1 tablespoon of finely chopped fresh thyme leaves to the butter mixture, and mix until well combined.
- Gradually add 2 cups of all-purpose flour and 1/4 teaspoon of salt to the mixture, and mix until a dough forms.
- Roll the dough into a log shape, about 2 inches in diameter, and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes.
- Once chilled, slice the dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
