Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 4 large eggs
- 1 1/2 cups white sugar
- 1/4 cup all-purpose flour
- 2/3 cup fresh lemon juice
- 1/4 cup confectioners' sugar for dusting
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan.
- In a medium bowl, mix together 1 cup of softened butter, 2 cups of flour, and 1/2 cup of sugar. Press into the bottom of the prepared pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
- In another bowl, whisk together 4 eggs, 1 1/2 cups of sugar, 1/4 cup of flour, and lemon juice until well blended.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
- Once the bars are completely cooled, sprinkle with confectioners' sugar before cutting into squares.
