Instructions

  • Add the ice water, 1 tablespoon at a time, and pulse until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  • On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim any excess. Prick the bottom of the crust with a fork.
  • Arrange the sliced peaches in a circular pattern over the crust, slightly overlapping. In a small bowl, mix together the honey, melted butter, brown sugar, cinnamon, and vanilla extract. Drizzle the honey mixture over the peaches.
  • Bake the tart for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
