Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3-4 tablespoons ice water
- 5-6 ripe peaches, peeled and sliced
- 1/4 cup honey
- 2 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Add the ice water, 1 tablespoon at a time, and pulse until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim any excess. Prick the bottom of the crust with a fork.
- Arrange the sliced peaches in a circular pattern over the crust, slightly overlapping. In a small bowl, mix together the honey, melted butter, brown sugar, cinnamon, and vanilla extract. Drizzle the honey mixture over the peaches.
- Bake the tart for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
- Allow the tart to cool for 10 minutes before serving. Serve warm and enjoy!
