Earl Grey Lavender Pie

Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 3-4 tablespoons ice water
- 3 Earl Grey tea bags
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 1/4 cup dried culinary lavender
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon lavender extract
- Purple food coloring (optional)
- Whipped cream and fresh lavender sprigs for garnish
Instructions
- In a food processor, combine 1 1/4 cups of flour and 1/2 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Add the ice water, 1 tablespoon at a time, and pulse until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and transfer it to a 9-inch pie dish. Trim and crimp the edges, then prick the bottom of the crust with a fork. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment paper and bake for an additional 5-7 minutes, or until the crust is golden brown. Set aside to cool.
- In a small saucepan, heat the heavy cream and whole milk over medium heat until it just begins to simmer. Remove from heat, add the Earl Grey tea bags, and steep for 10 minutes. Remove the tea bags, gently squeezing out any excess liquid, and discard them.
- In another small saucepan, combine the dried lavender and granulated sugar. Use a muddler or the back of a spoon to bruise the lavender and release its oils into the sugar. Add the lavender-infused sugar to the steeped cream mixture and heat over medium heat until it just begins to simmer.
- In a separate bowl, whisk together the egg yolks, cornstarch, and 1/4 teaspoon of salt. Gradually pour the hot cream mixture into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil. Remove from heat and stir in 2 tablespoons of butter, vanilla extract, lavender extract, and a few drops of purple food coloring, if desired.
- Pour the filling into the cooled pie crust and smooth the top. Place a piece of plastic wrap directly on the surface of the filling to prevent a skin from forming. Refrigerate for at least 4 hours, or until set.
- Before serving, garnish the Earl Grey Lavender Pie with whipped cream and fresh lavender sprigs. Enjoy!
