Instructions

  • Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  • In a medium bowl, whisk together 1 1/2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
  • In a large bowl, cream 1/2 cup of softened butter and 1 cup of sugar until light and fluffy.
  • Beat in 2 eggs, one at a time, then stir in 2 teaspoons of vanilla extract.
  • Gradually mix in the dry ingredients alternately with 1/2 cup of milk until just blended.
  • Pour or scoop the batter into the prepared muffin cups, filling them 2/3 full.
  • Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the pan for 10 minutes, then remove to cool completely on a wire rack.
