Ingredients
- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup boiling water
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking dish.
- In a large bowl, combine 4 cups of fresh blueberries, 1/2 cup of granulated sugar, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Mix well and spread the mixture evenly in the prepared baking dish.
- In a separate bowl, combine 1 cup of all-purpose flour, 1/4 cup of granulated sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Cut in the 1/2 cup of cold, unsalted butter until the mixture resembles coarse crumbs.
- Sprinkle the flour mixture over the blueberry mixture in the baking dish.
- Pour 1/4 cup of boiling water over the topping.
- Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
- Allow the cobbler to cool for 10-15 minutes before serving. Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
