Ingredients
- 1 cup dried black-eyed peas, soaked overnight and drained
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic, diced carrots, celery, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
- Add the soaked and drained black-eyed peas, cumin, paprika, and cayenne pepper. Stir to combine with the vegetables.
- Pour in the vegetable broth and diced tomatoes. Season with salt and pepper to taste.
