  • Add 1 cup of water, 1/3 cup of vegetable oil, 1 teaspoon of white vinegar, and 1 teaspoon of vanilla extract to the dry ingredients. Mix until smooth.
  • Divide the batter evenly into three separate bowls.
  • Add black gel food coloring to one bowl, purple gel food coloring to another bowl, and blue gel food coloring to the third bowl. Mix each bowl until the desired galaxy colors are achieved.
  • Spoon a little bit of each colored batter into each cupcake liner, layering the colors to create a galaxy effect.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
