Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.
  • In a medium bowl, mix 2 cups of graham cracker crumbs, 1/4 cup of sugar, and 1/2 cup of melted butter. Press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat 4 packages of softened cream cheese, 1 cup of sugar, and 1 teaspoon of vanilla extract until smooth. Add 4 large eggs, one at a time, mixing well after each addition. Stir in 1/4 cup of heavy cream.
  • Divide the cheesecake batter into three equal portions. Tint one portion with purple food coloring, one with blue, and one with pink.
  • Drop spoonfuls of the colored batter onto the crust in the pan, alternating colors. Use a knife to gently swirl the colors together to create a galaxy effect.
  • Place the springform pan in a large roasting pan. Fill the roasting pan with hot water to reach halfway up the sides of the springform pan.
  • Bake for 1 hour, or until the center is set and the edges are slightly golden. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the water bath and refrigerate for at least 4 hours or overnight.
  • Before serving, sprinkle edible silver star sprinkles on top of the cheesecake for a galaxy effect. Slice and enjoy!
