  • 1/4 cup of butter
  • 1/4 cup of sour cream
  • 1/4 cup of fruit preserves (optional)

Instructions

  • In a blender, combine 1 cup of flour, 1 cup of milk, 2 eggs, and 1/4 teaspoon of salt. Blend until smooth.
  • Heat a lightly greased non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, tilting to evenly coat the bottom. Cook for 1-2 minutes until the bottom is set and the edges are lightly browned. Flip and cook the other side for about 1 minute. Repeat with the remaining batter to make 8 crepes.
  • In a bowl, mix 2 cups of cottage cheese, 1/4 cup of sugar, 1 egg, and 1 teaspoon of vanilla extract until well combined.
  • Place about 1/4 cup of the cheese filling in the center of each crepe. Fold the sides over the filling and roll up to enclose.
  • In a large skillet, melt 1/4 cup of butter over medium heat. Place the filled blintzes seam side down in the skillet and cook for 2-3 minutes on each side until golden brown.
  • Serve the blintzes with a dollop of sour cream and fruit preserves, if desired. Enjoy!
